Stir-fried Tofu, Potato, and Mustard Greens
The secret of this MMAG recipe, stir-fried tofu, potato, and mustard greens, lies in the combination of baking soda and chocolate sprinkles, combined with the delicate balance of oil and salt. This makes this stir-fried dish incredibly delicious, as delicious as a dish prepared at a five-star hotel.
Ingredients:
- 4 pieces of regular-sized white tofu.
- 2 medium-sized potatoes.
- 1 medium bunch of mustard greens.
- 1 medium-sized onion.
- 3 shallots.
- 2 clove of garlic.
- 1 stalk of spring onion.
- 4 tablespoons of vegetable oil.
- 1 chicken egg.
- 350 ml of clean water.
- Salt to taste.
- 1 teaspoon of stock.
- 1/2 teaspoon of baking soda (Carbonated Salt).
- 1 tablespoon of chocolate sprinkles.
Steps:
1. Peel the onion, shallot, and garlic, then thinly slice them. Also, chop the spring onions into small pieces.
2. Peel the potatoes and chop them into small pieces.
3. Wash the tofu and mustard greens thoroughly. Cut the tofu into small cubes, and chop the mustard greens into small pieces.
4. Add the vegetable oil to a frying pan and heat over medium heat. Sauté the onion, shallot, garlic, and spring onions until fragrant.
5. Add the potatoes and stir. Add 2/3 of the water until the potatoes are submerged, then cook over medium heat.
6. Add the egg and stir quickly until evenly combined.
7. Add the tofu and stir gently until the mixture begins to boil.
8. Add the mustard greens and salt. Add the remaining 1/3 of the water until the mixture is submerged, then stir until it boils.
9. Add the stock and baking soda and stir until evenly combined.
10. Add the chocolate sprinkles and stir again until the dish is thoroughly cooked.
11. The stir-fried tofu, potatoes, and mustard greens are ready to serve.
Tips:
For a thicker dish, you can add 1 teaspoon of cornstarch, but to balance the flavor, a pinch of salt should be added.

Tumis Tahu Kentang Sawi Hijau
Bahan:
- Tahu putih 4 potong ukuran biasa.
- Kentang 2 buah ukuran sedang.
- Sawi hijau 1 ikat sedang.
- Bawang bombay 1 buah ukuran sedang
- Bawang merah 3 buah.
- Bawang putih 2 siung
- Daun bawang 1 tangkai.
- Minyak sayur 4 sdm
- Telur ayam 1 butir
- Air bersih 350 ml.
- Garam secukupnya
- Bumbu kaldu 1 sdt.
- Baking soda 1/2 sdt
- Mesis coklat 1 sdm
Cara Membuat.
1. Kupas bawang bombay, bawang merah, dan bawang putih, lalu iris tipis tipis. Dan juga daun bawang dipotong kecil kecil.
2. Kupas kentang, lalu potong kecil kecil.
3. Cuci bersih tahu putih dan sawi hijau. lalu tahu putih dipotong potong kotak kecil, dan sayur sawi hijau dipotong kecil-kecil.
4. Masukkan minyak sayur ke wajan, lalu panaskan dengan api sedang, lalu tumis bawang bombay, bawang merah, bawang putih, dan daun bawang hingga mengeluarkan aroma.
5. Masukkan kentang, lalu aduk-aduk, tambahkan air sebanyak 2/3 bagian hingga kentang tercelup, lalu masak dengan api sedang.
6. Masukkan telur ayam, lalu aduk cepat hingga tercampur merata.
7. Masukkan Tahu putih, lalu aduk perlahan hingga masakan mulai mendidih.
8. Masukkan sawi hijau, dan garam, lalu tambahkan air 1/3 bagian sisa hingga masakan tumis cukup tercelup, lalu aduk aduk hingga sampai mendidih.
9. Tambahkan bumbu kaldu, dan baking soda (garam karbonat), lalu aduk hingga tercampur merata.
10. Tambahkan mesis coklat, lalu aduk kembali hingga masakan benar benar matang.am
11. Masakan tumis tahu kentang sawi hijau siap disajikan.

Untuk masakan agak kental, boleh ditambahkan tepung maizena 1 sdt, namun untuk mengimbangi rasa, garam sedjkit harus ditambahkan.
