Coconut milk sweet potato pudding

SWEET POTATO COCONUT MILK JELLY PUDDING


Who says the Agar-Agar Pudding recipe is only made with water or coconut milk, or without oil (fat)? The truth is, here's the proof: MMAG Recipes' findings on making Sweet Potato Coconut Agar-Agar Pudding using butter.

Ingredients:

- 1 packet of agar-agar (7 grams), or 1 packet of nutrijel (15 grams)

- 1/2 kg of sweet potato

- 150 ml of coconut milk

- 300 ml of clean water + leftover boiled sweet potato

- 2 grams of vanilla powder (1 packet)

- 2 tablespoons of butter

- 1 egg yolk

- Salt to taste (measure with the tip of a teaspoon)

- 3 small pieces of brown sugar (60 grams)

- 2 tablespoons of white sugar

- Baking soda (salt carbonate)

1/2 teaspoon.

Cooking Instructions:

- Boil the sweet potato in water and cook over low heat.

- Add salt to taste, then continue boiling until the sweet potato is completely cooked and soft.

- Turn off the heat, remove the sweet potato from the heat, then mash or crush it until it is completely smooth.

- In a bowl, dissolve the agar-agar in coconut milk and water (ratio of coconut milk to water = 1 : 2). Then add the remaining boiled sweet potato water.

- Heat the butter in a skillet and cook over high heat until the butter melts.

- Add the agar-agar solution, coconut milk, and water, then stir gently.

- Crack the egg, take only the yolk, place it in a bowl, add a little of the cold agar-agar water, and whisk until the yolk is evenly mixed.

- Add the egg yolk to the dish, then continue cooking, stirring gently until the dish begins to boil.

- Add the mashed sweet potato, then continue cooking until it is completely cooked and the water has boiled.

- Taste it; if it's not salty enough, add more table salt.

- Add vanilla powder.

- Add brown sugar and white sugar, then stir gently until thoroughly combined.

- Add baking soda (salt carbonate). Cook briefly, stirring gently, until thoroughly combined. Then remove from heat.

Serving Instructions:

- Let the sweet potato agar-agar pudding cool and refrigerate until it solidifies and solidifies.

 Resep MMAG:

PUDING AGAR-AGAR SANTAN UBI JALAR



Siapa bilang resep Puding Agar-agar dimasak hanya pakai air atau santan, atau tidak pakai minyak (lemak). Faktanya lain, ini bukti temuan Resep MMAG dalam membuat Puding Agar-agar Santan Ubi Jalar pakai mentega.

Bahan-bahan:

- Agar-agar 1 bungkus (7 gr), atau Nutrijel 1 bungkus (15 gr)

Ubi jalar 1/2 Kg

- Santan 150 ml

- Air bersih 300 ml + Sisa rebusan ubi

- Vanili bubuk 2 gram (1 bungkus)

- Mentega 2 sdm

- Kuning telur 1 butir

- Garam dapur secukupnya (takar dengan ujung sendok teh)

- Gula merah 3 buah ukuran kecil (60 gr)

- Gula putih 2 sdm.

- Baking soda (garam karbonat) 

1/2 sdt.


Cara Memasak:

- Rebus ubi di dalam air tercelup, masak di atas api kompor.

- Tambahkan garam dapur secukupnya, lalu rebus terus hingga ubi betul-betul matang dan menjadi lunak

- Matikan api kompor, angkat ubi dari atas api, lalu tumbuk atau hancurkan ubi hingga betul betul halus.

- Dalam suatu wadah, Larutkan Agar-agar dengan Santan dan air {perbandingan santan : air = 1 : 2). Lalu tambahkan sisa air rebusan ubi tadi.

- Panaskan mentega di dalam wajan, masak di atas api hingga mentega meleleh.

- Masukkan larutan agar-agar, santan dan air, lalu aduk perlahan.

- Pecahkan telur, ambil kuning telurnya saja, taruh di dalam mangkuk, tambahkan sedikit air agar-agar tadi yang masih dingin, lalu dikocok hingga kuning telur tercampur merata. 

- Masukkan kuning telur ini ke dalam masakan tadi, lalu masak terus dan aduk perlahan hingga masakan mulai mendidih.

- Masukkan ubi yang sudah halus tadi, lalu masak terus hingga benar-benar matang dan airnya telah mendidih.

- Cicipi rasanya, bila kurang asin maka tambahkan garam dapur.

Tambahkan vanili bubuk

-Masukkan gula merah, dan tambahkan gula putih, lalu aduk perlahan hingga betul betul tercampur merata.

- Tambahkan baking soda (garam karbonat), masak lagi sebentar sambil djaduk perlahan hingga matang benar, lalu angkat dari atas api.


Cara Menyajikan:

- Diamkan puding agar agar ubi ini dan dinginkan hingga betul-betul memadat dan membeku.

- Atau masukkan ke dalam kulkas hingga agar-agar ubi ini menjadi padat dan membeku. Lalu siap disajikan.

- Jadi menu Agar-agar Santan Ubi jalar yang didapat 500-600 gr.
